Crispy Fried Chicken Recipe

Ingredients
  • 1 kg chicken drumettes
  • 400 g frying mix
  • 4 tbsp curry powder
  • 20 turns of black pepper
  • 1.5 L cooking oil
For marination
  • 3 tbsp curry powder
  • 200 ml milk
Instruction

First, Rinse the chicken drumettes under running water. Place the chicken, curry powder, and milk in a resealable bag. Mix well and refrigerate for at least 2 hours to marinate. In a bowl, combine frying mix, curry powder, and black pepper. Coat the marinated chicken in the mixture and let it sit for 30 minutes. Heat 1.5 L of cooking oil in a deep pot (a 24 cm stainless steel pot is recommended) until it reaches 180°C. Use enough oil to fully submerge the chicken. Fry half the chicken pieces at a time for 6 minutes on low heat. Test the oil temperature by dropping a breadcrumb—if it floats to the surface in 3 seconds, the oil is ready. During frying, gently dip the chicken into the oil without letting it stick to the bottom. Avoid disturbing the chicken for the first 1–2 minutes to prevent the coating from separating. Turn the heat to high and fry for an additional 2 minutes. Remove the chicken and drain the excess oil on a rack. Repeat for the remaining pieces.

Sweet and Spicy Sauce for Seasoned Chicken

Ingredients
  • 1 tbsp soy sauce
  • 1 tbsp Go-chu-jang (Korean chili paste)
  • 2 tbsp ketchup
  • 4 tbsp sugar
  • 1 tbsp minced garlic
  • ½ tbsp minced ginger
  • 1 tbsp sesame seeds
  • ½ tbsp frying mix
  • 100 ml water
  • 1 tbsp cooking oil
Instructions

First, mix frying mix and water to make a slurry. In a pan, combine soy sauce, Go-chu-jang, ketchup, sugar, garlic, ginger, sesame seeds, the slurry, and cooking oil. Stir and bring to a boil over high heat. Reduce to low heat and simmer for 30 seconds until the sauce thickens. You’ll know it’s ready when the pan bottom shows clear lines when scraped. Toss the fried chicken in the sauce until evenly coated. Sprinkle sesame seeds on top for garnish.
